1. What a cookie is
A cookie is a small file a website stores in your browser to remember something between pages or between visits. The same approach applies here to equivalent technologies such as local storage or pixels: what matters is not the technical name but that something is stored on your device.

The first two are strictly necessary: without them the site cannot remember your language or your own answer to this very question, so the law exempts them from consent (Art. 22.2 LSSI). The Google Analytics ones do not load until you accept: if you decline or ignore the banner, they never exist.
3. What we use analytics for
To learn which pages get read, what people look for and what they fail to find, and to improve the site accordingly. It is configured as conservatively as the tool allows: no advertising, no combining your data with other Google services for advertising purposes, and the shortest retention period available.
Analytics never tells us who you are: we see how many people do something, not who does it.
4. How to change your mind
You can change it whenever you like from the Cookies link in the footer, which reopens the options. Declining is as easy as accepting and has no consequences: the site works just the same.
You can also delete or block cookies from your browser (Chrome, Firefox, Safari, Edge). If you delete the necessary ones, the site will ask you again about language and consent.
